Aasted’s expert engineers have manufactured a machine with unheard of capacities that produces 3 tons cookies/hr. The cookies exit the oven at 130 degrees and are cooled down to 70 degreesC on a belt with cold water. Aasted’s high technology cooling tunnel then cools the cookies from 70 degreesto 17 degreesC on a high speed belt traveling 10m/min for just 13 minutes! A key difference between an Aasted cooling tunnel and a traditional tunnel is their expert humidity control. As water leaves the cookies and creates humidity in the tunnel, their dehumidifier technology transforms the moisture into dry air so as not to damage the chocolate crystallization in the product, all within 13 minutes!
