About High Pressure Processing
High Pressure Processing (HPP) is a method of non-thermal food processing where food and beverages are subjected to elevated pressures of up to 87,000 pounds per square inch. This pressure, applied uniformly around and throughout the product, helps to disrupt the cellular activity of bacteria and food-borne pathogens. Because HPP does not apply or use heat, it eliminates any thermal degradation of the product that may occur through other conventional processing methods, such as pasteurization, making it especially beneficial for heat-sensitive products. As such, HPP retains food and beverage quality, maintains natural freshness, and extends microbiological shelf life.
