The continuous motion of the ultra-high-molecular-weight (UHMW) polyethylene rollers gently spreads the dough simultaneously in opposite directions from the center to its edges. A hand-turned wheel on top of the machine manipulates roller height, and a digital height indicator allows accurate positioning of the rollers.
