Following recent cheese trends and innovative flavour variations, new technology will enable manufacturers to product cottage cheese differently by using a Horizontal Cottage Cheese VAT, a prototype that has been developed. It is an automated enclosed system rather than the traditional open-VAT.
The HCCV system ensures that each batch of cottage cheese is consistant which is not always achievable with the traditional method as it relies on humans, whereas HCCV is fully automated. The other advantage to a fully automated and enclosed system is that is minimizes human intervention and exposure to the surrounding atmosphere and has a cleaning process between batches.
Health trends are raising particular interest in cheese and dairy products and cottage cheese is still an untapped market, and the flavour varieties are endless. If manufacturers invest in a HCCV system, it would enable them to make cottage cheese to meet consumer’s demands. Cottage cheese is an attractive cheese to consumers as it is a good source of calcium, naturally low in carbohydrate and is rich in proteins.
