When used for UHT processed cheese products, these surge vessels are fitted with scraped surface and internal agitation to serve as a creaming tank.
The internal agitator functions to scrape the walls of the surge vessel, preventing product build-up and aiding viscosity development.
This provides operators with the opportunity to cream the cooked product to achieve the required viscosity for filling, or to provide holding or dwell time for the product prior to filling.
